The Specialty Coffee Association of America recommends 7.5 grams of coffee per 6 ounces of water. That being a bit complex in the grams to something most of us understand realm, we recommend starting with three tablespoons of coffee per cup (the one in your hand or at the office, not the special ones for Holidays) and then adjusting to taste.
Grind the coffee immediately prior to using it to the finest grind suitable for your method (bigger for French press, smaller for drip, but so that it doesn’t pass through the filter) and use only clean, cold water. If using a French press, allow 4 to 6 minutes, stirring once with a wooden spoon, press and serve. ( Any coffee allowed to remain in the press for future use will absorb some of the less desirable flavors from contact with the grounds below the screen.)
If using a drip method, the water should all be passed through the filter within about the same 4 to 6 minutes, longer allowing for the extraction of unwanted, bitter flavors.
